 Molasses Glazed Asparagus Sandwich

Category: Sandwiches

1 bunch asparagus
1 pkg bacon
1/2 cup brown sugar or molasses
Bread or buns
juice from one lemon
salt and pepper to taste

Cut off about 1 1/2 inches off of the base of the asparagus. Blanche the asparagus in boiling water and then plunge them into ice water to stop the cooking. Remove the asparagus from the ice water and pat dry with a paper towel.
Cut the bacon strips in half and wrap a piece of bacon around each asparagus stalk. Place the asparagus on a baking sheet and sprinkle with the lemon juice.
Combine the lemon zest and brown sugar or molasses together in a small bowl. Squish the lemon zest into the mix to help coat lemon essential oil in to the sweet stuff.
Sprinkle the sweet mix all over the asparagus. Roll the asparagus in the sugar to coat them evenly if needed. Lightly spray the asparagus once the sugar is on them with vegetable oil. Place the oven rack in the center of the oven and turn the oven on broil. Broil the prepared asparagus for about 15 mins or until the bacon is cooked through
Place the roasted and glazed asparagus into a lightly toasted roll, or open face on whole wheat bread.
